The story behind the bowl
Operating since 1957, Kokutei is one of the defining names of Kumamoto ramen. Milky pork broth, roasted-garlic mayu, medium noodles and the famous raw egg yolk create a bowl that is smoky, mellow and unmistakably local.
Before you go: Visit the Nihongi original for the full story; stir the yolk into only part of the soup to compare both textures.
